Irresistibly crunchy, Sourdough Flatbread Chips are crafted from homemade sourdough flatbreads. These chips offer a delightful twist on the traditional sourdough experience. Just like sourdough discard crackers, Sourdough Flatbread chips are the perfect snack! The salty crunch of each bite is brought to another level with the herby, almost citrus-like flavors of the za’atar.  Serve it with hummus for a delicious and nutritious snack. 

Crispy

In just 15 short minutes, these soft and tender sourdough flatbreads will bake up nice and crispy! Perfect as an afternoon snack or an easy side for a Mediterranean meal.

Reduces Waste

I hate waste! So, if we ever have leftover sourdough flatbread, I love converting them into this delicious snack. It’s quick, simple and so tasty!

Ingredients

Sourdough Flatbread – Sourdough Flatbread can be made with an active sourdough starter or sourdough starter discard. They are shaped and then fried up in a hot skillet. 

Olive Oil – Brings a delicious flavor and crispiness to the homemade flatbread chips.

Salt – Any unrefined or flaky salt will do, but my favorite is Redmond’s unrefined salt for some extra minerals!

Garlic – Fresh, minced garlic can be substituted with 1/2 teaspoon of garlic powder

Za’atar Seasoning –  Za’atar seasoning has a distinctive and savory flavor profile, combining the earthy notes of dried herbs like thyme and oregano with the nuttiness of sesame seeds and a slightly tangy, citrusy kick from sumac.

HOW TO MAKE SOURDOUGH FLATBREAD

CREATE THE DOUGH

To a large bowl, add all-purpose flour, sourdough starter (active or discard), milk, baking powder, olive, and salt. I like to mix the ingredients with a dough whisk, but you can also do so with a wooden spoon or by hand. Mix until most of the flour has been incorporated. Remove the dough from the bowl and place it on a lightly floured work surface.

KNEAD THE DOUGH

To knead the dough, grab a piece and fold it towards the center, then press the heel of your hand into the dough. Turn the dough clockwise a quarter turn. Repeat for about 2-3 minutes. The dough may look a little lumpy, but that is okay.

If the dough is looking dry, sprinkle a little extra water. If the dough is sticky, sprinkle a little extra flour.

LEAVE TO REST

If you are using an active sourdough starter, place the dough in a greased bowl and cover it with plastic wrap, or I like to use a reusable shower cap. Leave in a warm place to ferment for 18-24 hours.

If you are using an unfed sourdough starter, cover the dough with a tea towel, and let the dough rest for at least 30 minutes. I’ve left it for longer – 2-4 hours. This allows the gluten to relax so it is easier to stretch.

SHAPE AND FRY

Once the dough has rested, take a bench scraper or sharp knife and cut it into 8 equal parts. I will cut the dough into quarters and then cut each piece in half. They don’t have to be perfectly equal pieces, just eyeball them.

Before you begin rolling out the dough balls, sprinkle a little extra flour on your work surface and the rolling pin. Roll out each dough ball one at a time. You want them pretty thin, about a 1/8 inch. They don’t have to be a perfect circle to be perfectly tasty! Don’t have a rolling pin? You can use an empty bottle or carefully stretch the dough with your hands.

Preheat your cast-iron skillet to medium heat. Place one flatbread in the cast iron at a time.

Cook for a couple of minutes. The dough will start to bubble and puff up. Flip and cook for 1-2 minutes more.

Remove from the pan and repeat until all of the sourdough flatbread has been cooked.

How to Make Sourdough Flatbread Chips

Preheat the oven to 350 degrees f. Line a large baking sheet with a piece of parchment paper. Spray a light coating of cooking oil on top. 

Cut the sourdough flatbread into triangle pieces with kitchen scissors. Try your best to keep them close in sizing for even baking.

Place the sourdough flatbread triangles in a large bowl with the olive oil, minced garlic, salt, and za’atar seasoning. Toss them well until the seasoning is evenly coated. 

In an even layer, spread the sourdough flatbread on the sheet pan. Place in the hot oven and bake for 15-17 minutes or until golden brown. If you prefer an extra crispy chip, bake for extra time. 

Serve warm with your favorite dip and enjoy!

Store-bought pita or flatbread chips can be made with commercial yeast, whereas, sourdough flatbread chips are made with wild yeast from a sourdough starter.

The sourdough starter will naturally leaven the dough so that it is light and tender before being baked. The sourdough starter can also naturally ferment the dough, which is then easier for our bodies to digest.
