From choosing the right cheese blend to using mayo on the bread for a perfectly golden, non-burnt crust, I’m sharing all my best tips so you can get that perfect cheese pull and bold, comforting flavor every time.   • Sourdough Bread – I love using my go-to Sourdough Bread recipe to make thick, crispy grilled cheeses. Look up the health benefits of sourdough bread if you’d like to learn more. My favorite sourdough bread is a low hydration sourdough loaf, which means the crumb is tighter and has fewer holes. Higher hydration loaves (75% and above) usually have larger holes in the crumb, which your cheese will melt through. If you prefer a softer sandwich bread, my 100% Sourdough Sandwich Bread or this 2-Hour Sourdough Discard Sandwich Bread recipe also makes for tasty grilled cheeses. Or just use your favorite sourdough loaf. 
  • Shredded Cheese – The secret to the perfectly melty grilled cheese sandwich is shredding your own cheese. Preshredded cheese contains ingredients that prevent the cheese from sticking together. Slice cheese also can melt unevenly or take too long, so I prefer shredded cheese for the perfect melty goodness. You can choose a blend of your favorite aged cheeses like Gruyere, sharp Cheddar cheese, Havarti, Gouda, Monterey Jack, goat cheese, pepper jack etc. With all the cheese options, you’ll definitely find something you like. 
  • Mayo – I love the taste and color that mayo brings to sourdough grilled cheese over regular butter. It doesn’t burn as easily and it brings a delicious tang to the sandwich. However, if you prefer, you can substitute the mayo for high-quality salted butter, which takes the richness and depth of flavor to a whole new level. 

How to Make a Sourdough Grilled Cheese 

  1. Preheat a medium skillet to medium-low heat.

  1. While the skillet preheats, prepare your ingredients. Slice the sourdough bread into 1/2-inch thick pieces, then spread the mayo on the outside of each slice of bread to ensure an evenly crispy, golden exterior.
  2. Shred your favorite cheeses and mix them together in a bowl so the flavors are evenly distributed and melt consistently.

  1. Place the mayo-side of one slice into the preheated iron skillet.

  1. Top the bread with the shredded cheese and finally place the other slice of sourdough on top. Press down gently with a spatula to help the sandwich cook evenly.

  1. Cook the sourdough grilled cheese for about 3-4 minutes per side, or until the bread is perfectly golden brown and crispy and the cheese is melted all the way through. You know the cheese is completely melted when you try to pull the top piece of bread apart and it remains stuck together

  1. Remove the sandwich from the heat, slice in half, and serve immediately. Enjoy while warm for the best melty, gooey experience.

How to Store

Keep any leftover grilled cheese sandwiches in an airtight container in the fridge for up to 2 days. Reheat in a skillet over medium-low heat to bring back that crisp exterior and melted cheese.

You can also wrap sandwiches in foil and bake at 350°F for 10 minutes to get them close to fresh-off-the-skillet texture. Avoid microwaving if you want the bread to stay crisp since it tends to get soft and chewy.

Can I use butter instead of mayo?

Yes, you can swap salted butter for mayo, but the browning may happen faster. Mayo adds a subtle tang and helps prevent burning. Results may vary depending on bread thickness and skillet heat.

What is the best thickness for the sourdough slices?

Slice the bread about 1/2 inch thick. Thicker slices may take longer to melt the cheese, and thinner slices could burn before it melts. This thickness gives the best crisp-to-cheese ratio and keeps the sandwich sturdy.

Can I use preshredded cheese?

Preshredded cheese melts unevenly and often takes longer. Shredding your own creates smooth, even melt and gooey texture. You’ll notice a better pull-apart and more cohesive sandwich.

What cheeses work best together?

A blend of sharp and creamy cheeses works best. Cheddar, Gruyere, Havarti, Gouda, or Monterey Jack all melt well and taste delicious. You can experiment with other cheese combinations, but results may vary if you try unusual blends.
